Yes I started another blog today dedicated to my waterfowl recipe's.
So many people tell me that duck and goose is gross to eat. Well friends I beg to differ.
Here are some recipe's I have now, and I will continue to add to them weekly for a year. (I seriously have got to get rid of the ducks and geese in my freezer.)
If anything it'll be a fun little project for me.

i want to know how to prep a duck. i've tried a few times with ones i got frozen from the grocery store. they were so greasy and nasty!
well if you're talking about a brine here is a recipe.
6-8 average-sized ducks
1 cup kosher salt
3 1/2 quarts water
1 cup brown sugar.
in a saucepan over low heat, combine 2 cups water and 2 cup salt stir till dissolved. Then mix with other ingredients. Place ducks in teh cooled brine and refrigerate for 6-24 hours. Rinse and pat dry.
then you can marinade them then cook them however you'd like.
I never use a brine though. i usually just slow cook them.
